Chocolate Chip Ice Cream Sandwiches
Vanilla ice cream pressed between soft chocolate chip cookies and frozen until firm.

Ingredients
- 1/2 cup unsalted butter, softened (113 g)
- 1/2 cup brown sugar (100 g)
- 1/4 cup granulated sugar (50 g)
- 1 large egg
- 1 tsp vanilla extract
- 1 1/4 cups all-purpose flour (150 g)
- 1/2 tsp baking soda
- 1/4 tsp salt
- 3/4 cup semi-sweet chocolate chips (130 g)
- 1 quart vanilla ice cream, slightly softened
- 1/2 cup mini chocolate chips or sprinkles, optional (85 g)
Directions
- Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a large bowl, beat the softened butter, brown sugar, and granulated sugar until smooth and creamy.
- Mix in the egg and vanilla extract until combined.
- Add the flour, baking soda, and salt and mix until a soft cookie dough forms. Fold in the chocolate chips.
- Scoop the dough into 16 evenly sized balls and place them on the prepared baking sheet. Gently flatten each ball slightly.
- Bake for 9-11 minutes, until the edges are lightly golden but the centers are still soft. Let the cookies cool completely.
- Place a generous scoop of softened vanilla ice cream onto the flat side of one cookie. Top with another cookie and gently press together until the ice cream reaches the edges.
- Roll the exposed ice cream edges in mini chocolate chips or sprinkles, if desired.
- Place the sandwiches on a tray and freeze for at least 2 hours, or until the ice cream is firm.
- Serve straight from the freezer and enjoy!
