Ingredients

  • 1/2 cup unsalted butter, softened (113 g)
  • 1/2 cup brown sugar (100 g)
  • 1/4 cup granulated sugar (50 g)
  • 1 large egg
  • 1 tsp vanilla extract
  • 1 1/4 cups all-purpose flour (150 g)
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 3/4 cup semi-sweet chocolate chips (130 g)
  • 1 quart vanilla ice cream, slightly softened
  • 1/2 cup mini chocolate chips or sprinkles, optional (85 g)

Directions

  1. Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a large bowl, beat the softened butter, brown sugar, and granulated sugar until smooth and creamy.
  3. Mix in the egg and vanilla extract until combined.
  4. Add the flour, baking soda, and salt and mix until a soft cookie dough forms. Fold in the chocolate chips.
  5. Scoop the dough into 16 evenly sized balls and place them on the prepared baking sheet. Gently flatten each ball slightly.
  6. Bake for 9-11 minutes, until the edges are lightly golden but the centers are still soft. Let the cookies cool completely.
  7. Place a generous scoop of softened vanilla ice cream onto the flat side of one cookie. Top with another cookie and gently press together until the ice cream reaches the edges.
  8. Roll the exposed ice cream edges in mini chocolate chips or sprinkles, if desired.
  9. Place the sandwiches on a tray and freeze for at least 2 hours, or until the ice cream is firm.
  10. Serve straight from the freezer and enjoy!
