Ingredients
- 2 ripe bananas
- 2 cups all-purpose flour (240 g)
- 2 Tbsp granulated sugar
- 2 tsp baking powder
- 1/2 tsp baking soda
- 1/2 tsp salt
- 1 1/2 cups whole milk (360 mL)
- 2 large eggs
- 4 Tbsp unsalted butter, melted (55 g)
- 1 tsp vanilla extract
- Butter, for cooking
- 1 banana, sliced, for serving

Directions
- Mash the 2 ripe bananas in a large bowl until mostly smooth.
- In a separate bowl, combine the flour, sugar, baking powder, baking soda, and salt.
- Add the milk, eggs, melted butter, and vanilla to the mashed bananas and whisk until combined.
- Add the dry ingredients and gently stir until just combined. A few small lumps are fine.
- Melt a little butter in a skillet or griddle over medium heat.
- Pour portions of batter onto the hot skillet and cook until bubbles form across the surface and the edges begin to set, about 2–3 minutes.
- Flip the pancakes and cook for another 1–2 minutes, until fluffy and golden brown.
- Stack the warm pancakes and top with sliced banana and butter.
- Pour maple syrup generously over the stack and serve immediately.
