Ingredients

  • 8 large jalapeño peppers
  • 8 oz cream cheese, softened (225 g)
  • 1 cup shredded cheddar cheese (115 g)
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • 1/4 tsp salt
  • 1/4 tsp black pepper
  • 1/2 cup all-purpose flour (60 g)
  • 2 large eggs
  • 1 Tbsp milk
  • 1 1/2 cups panko breadcrumbs (90 g)
  • Vegetable oil, for frying

Directions

  1. Slice the jalapeños in half lengthwise and remove the seeds and membranes.
  2. Mix the cream cheese, cheddar, garlic powder, onion powder, salt, and pepper until combined.
  3. Fill each jalapeño half generously with the cheese mixture.
  4. Place the flour in one bowl. Whisk the eggs and milk in another, and place the panko breadcrumbs in a third.
  5. Coat each stuffed jalapeño in flour, then egg, then breadcrumbs.
  6. Heat about 2 inches of vegetable oil to 350°F (175°C).
  7. Fry the poppers in batches for 2–3 minutes, turning as needed, until deeply golden and crispy.
  8. Transfer to a paper towel-lined plate and let cool slightly.
  9. Serve warm while the centers are creamy and melted.
