S'mores Cookies
Soft chocolate chip cookies loaded with graham crackers and gooey marshmallows for the classic flavor of campfire s'mores.

Ingredients
- 2½ cups (315 g) all-purpose flour
- 1 tsp baking soda
- ½ tsp salt
- 1 cup (227 g) unsalted butter, softened
- ¾ cup (150 g) brown sugar
- ½ cup (100 g) granulated sugar
- 1 large egg
- 1 egg yolk
- 2 tsp vanilla extract
- 1½ cups (255 g) semi-sweet chocolate chunks
- 1 cup (100 g) mini marshmallows
- 1 cup (85 g) crushed graham crackers
- 6 large marshmallows, halved
Directions
- Preheat the oven to 350°F (175°C) and line two baking sheets with parchment paper.
- Whisk together the flour, baking soda, and salt in a medium bowl.
- In a large bowl, beat together the butter, brown sugar, and granulated sugar until light and fluffy. Mix in the egg, egg yolk, and vanilla.
- Gradually mix the dry ingredients into the wet ingredients until a soft dough forms.
- Fold in the chocolate chunks, mini marshmallows, and crushed graham crackers.
- Scoop large balls of dough onto the prepared baking sheets and gently press half of a large marshmallow into the top of each cookie.
- Bake for 10–12 minutes until the edges are lightly golden and the centers remain soft.
- Let cool for 10 minutes before serving warm for the best gooey marshmallow texture.
