Ingredients

  • 2 large yellow onions
  • 1 cup all-purpose flour (120 g)
  • 1 tsp paprika
  • 1 tsp garlic powder
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 1 large egg
  • 1 cup buttermilk (240 ml)
  • 2 cups panko breadcrumbs (120 g)
  • Vegetable oil, for frying
  • Ketchup or ranch, for serving

Directions

  1. Peel the onions and slice them into 1/2-inch-thick rounds. Separate the rounds into individual rings.
  2. In a shallow bowl, combine the flour, paprika, garlic powder, salt, and black pepper.
  3. In a second bowl, whisk together the egg and buttermilk. Place the panko breadcrumbs in a third bowl.
  4. Coat each onion ring in the seasoned flour, dip it into the buttermilk mixture, then coat thoroughly with the panko breadcrumbs.
  5. Heat about 2 inches of vegetable oil in a large pot to 350°F (175°C).
  6. Fry the onion rings in batches for 2-3 minutes, turning once, until crispy and deep golden brown.
  7. Transfer the onion rings to a wire rack or paper towel-lined plate and lightly season with salt while hot.
  8. Serve immediately with ketchup, ranch, or your favorite dipping sauce.
