Ingredients

  • 2 lb (900 g) ground beef (80/20)
  • 1 cup (60 g) panko breadcrumbs
  • 2 large eggs
  • 1 small onion, finely diced
  • 3 cloves garlic, minced
  • 1/2 cup (120 mL) milk
  • 2 tbsp Worcestershire sauce
  • 2 tbsp ketchup
  • 1 tbsp Dijon mustard
  • 1 tsp kosher salt
  • 1 tsp black pepper
  • 1 tsp smoked paprika
  • 1 tsp onion powder

Glaze

  • 1/2 cup (120 mL) ketchup
  • 2 tbsp brown sugar
  • 1 tbsp Worcestershire sauce
  • 1 tsp Dijon mustard

Directions

  1. Preheat the oven to 350°F (175°C). In a large bowl, combine the ground beef, breadcrumbs, eggs, onion, garlic, milk, Worcestershire sauce, ketchup, Dijon mustard, salt, pepper, smoked paprika, and onion powder. Mix until just combined.
  2. Shape the mixture into a loaf and place it on a parchment-lined baking sheet or in a loaf pan.
  3. Bake for 40 minutes.
  4. Meanwhile, whisk together the ketchup, brown sugar, Worcestershire sauce, and Dijon mustard.
  5. Remove the meatloaf from the oven and brush the glaze generously over the top.
  6. Return to the oven and bake for another 20–25 minutes, until the internal temperature reaches 160°F (71°C).
  7. Let the meatloaf rest for 10 minutes before slicing.
  8. Serve with mashed potatoes or roasted vegetables.
