French Fries
Classic homemade fries cooked until crisp and golden, then seasoned and served hot.

Ingredients
- 3 large russet potatoes (about 900 g)
- Vegetable or peanut oil, for frying
- 1 tsp salt, plus more to taste
Directions
- Wash and peel the potatoes, then cut them into even 1/4-inch thick fries.
- Place the cut potatoes in a large bowl of cold water and soak for at least 30 minutes.
- Drain the potatoes and dry them thoroughly with clean kitchen towels or paper towels.
- Heat the frying oil to 325°F (165°C).
- Fry the potatoes in batches for 3–4 minutes, until softened and pale but not browned.
- Remove the fries from the oil and let them rest for about 10 minutes.
- Increase the oil temperature to 375°F (190°C).
- Fry the potatoes again for 2–3 minutes, until golden brown and crispy.
- Remove the fries from the oil and immediately season with salt.
- Serve hot with ketchup or your favorite dipping sauce.
