Ingredients
- 5 large ripe peaches
- 3/4 cup granulated sugar (150 g)
- 1/2 cup water (120 mL)
- 2 Tbsp fresh lemon juice
- 1 tsp vanilla extract
- Pinch of salt
Directions
- Peel the peaches, remove the pits, and cut them into chunks.
- Add the sugar and water to a small saucepan. Heat over medium heat, stirring until the sugar completely dissolves, about 3–5 minutes. Remove from the heat and let cool slightly.
- Add the peach chunks, sugar syrup, lemon juice, vanilla extract, and salt to a blender.
- Blend until completely smooth and creamy.
- Pour the peach mixture into a shallow freezer-safe container and spread it evenly.
- Cover and freeze for about 2 hours, until partially frozen around the edges.
- Stir or scrape the partially frozen sorbet thoroughly with a fork, then return it to the freezer for another 2 hours, or until firm.
- Let the sorbet sit at room temperature for 5 minutes before scooping.
- Scoop into bowls or glasses and garnish with fresh peach slices if desired.
