Ingredients
- 2 1/4 cups all-purpose flour (280 g)
- 1/2 tsp baking powder
- 1/4 tsp baking soda
- 1/2 tsp salt
- 1/2 cup unsalted butter, softened (113 g)
- 3/4 cup granulated sugar (150 g)
- 1 large egg
- 1/3 cup sour cream (80 g)
- 1 1/2 tsp vanilla extract (7 mL)
- 1/4 tsp almond extract
Frosting
- 1/2 cup unsalted butter, softened (113 g)
- 2 cups powdered sugar (240 g)
- 2 tbsp heavy cream (30 mL)
- 1 tsp vanilla extract (5 mL)
- Pink food coloring
- Rainbow sprinkles
Directions
- In a medium bowl, whisk together the flour, baking powder, baking soda, and salt.
- In a separate large bowl, beat the softened butter and sugar until light and creamy.
- Beat in the egg, sour cream, vanilla extract, and almond extract until smooth.
- Gradually mix the dry ingredients into the wet ingredients until a soft dough forms.
- Cover the dough and refrigerate for 1 hour.
- Preheat the oven to 350°F (175°C). Roll the chilled dough to about 1/2 inch thick on a lightly floured surface.
- Cut the dough into large circles and arrange them on a parchment-lined baking sheet.
- Bake for 9–11 minutes, until the cookies are set but still pale and soft. Let cool completely.
- Beat the butter, powdered sugar, heavy cream, and vanilla until fluffy. Mix in a small amount of pink food coloring until the frosting is bright pink.
- Spread or pipe a thick layer of pink frosting over each cooled cookie and immediately cover with rainbow sprinkles.
