Ingredients

  • 2 1/4 cups all-purpose flour (280 g)
  • 1/2 tsp baking powder
  • 1/4 tsp baking soda
  • 1/2 tsp salt
  • 1/2 cup unsalted butter, softened (113 g)
  • 3/4 cup granulated sugar (150 g)
  • 1 large egg
  • 1/3 cup sour cream (80 g)
  • 1 1/2 tsp vanilla extract (7 mL)
  • 1/4 tsp almond extract

Frosting

  • 1/2 cup unsalted butter, softened (113 g)
  • 2 cups powdered sugar (240 g)
  • 2 tbsp heavy cream (30 mL)
  • 1 tsp vanilla extract (5 mL)
  • Pink food coloring
  • Rainbow sprinkles

Directions

  1. In a medium bowl, whisk together the flour, baking powder, baking soda, and salt.
  2. In a separate large bowl, beat the softened butter and sugar until light and creamy.
  3. Beat in the egg, sour cream, vanilla extract, and almond extract until smooth.
  4. Gradually mix the dry ingredients into the wet ingredients until a soft dough forms.
  5. Cover the dough and refrigerate for 1 hour.
  6. Preheat the oven to 350°F (175°C). Roll the chilled dough to about 1/2 inch thick on a lightly floured surface.
  7. Cut the dough into large circles and arrange them on a parchment-lined baking sheet.
  8. Bake for 9–11 minutes, until the cookies are set but still pale and soft. Let cool completely.
  9. Beat the butter, powdered sugar, heavy cream, and vanilla until fluffy. Mix in a small amount of pink food coloring until the frosting is bright pink.
  10. Spread or pipe a thick layer of pink frosting over each cooled cookie and immediately cover with rainbow sprinkles.
